This satisfying cashew stir fry is a plant-based twist on a classic favourite, delivering
bold flavour, crunch, and balanced nourishment. Fresh garlic and ginger create a
fragrant base, crisp vegetables add colour and texture, and roasted cashews bring
richness and bite. Maia BITES replace traditional chicken with clean,
plant-based protein, making this dish comforting, flavourful, and weeknight-friendly.

2 tbsp sesame oil
3 garlic cloves, minced
2 tbsp fresh ginger, minced
2 cups broccoli florets
1 bell pepper, sliced
1 onion, sliced
1 cup Maia Bites (textured plant protein) from Maia Farms
¾ cup roasted, unsalted cashews
½ cup coconut aminos
2 tbsp rice vinegar
2 tsp honey or maple syrup
1–2 tsp chili garlic sauce, to taste
Sea salt, to taste

Optional Garnish:
Sesame seeds
Chopped green onion

Instructions
1. Build the flavour base
Heat sesame oil in a large skillet or wok over medium-high heat. Add garlic and ginger
and sauté for 30–60 seconds, until fragrant.
2. Cook the vegetables
Add broccoli, bell pepper, and onion. Stir-fry for 3–4 minutes, until vegetables are just
tender but still crisp.
3. Add Maia Bites and cashews
Stir in the Maia Bites and roasted cashews. Cook for 3–4 minutes, allowing the Maia
Bites to warm through and absorb flavour.
4. Finish the sauce
Pour in coconut aminos, rice vinegar, honey or maple syrup, and chili garlic sauce. Stir
well to coat everything evenly. Cook for 8-10 minutes, until the sauce lightly reduces
and glazes the stir fry. Taste and adjust seasoning with salt as needed.
5. Garnish and serve
Remove from heat and garnish with sesame seeds and chopped green onions before
serving.
