1 bag Maia Strips (textured pea protein & oyster mushroom) from Maia Farms
2 cups broccoli florets
2 small white onions, thinly sliced
2 tbsp sesame oil
¼ cup coconut aminos or soy sauce
¼ cup water
1 tbsp maple syrup
2 tbsp fresh grated ginger
4 garlic cloves, minced
Sea salt, to taste
Black pepper, to taste
Garnish (optional):
1 tbsp sesame seeds
1 tbsp chopped green onion

1. Prepare the aromatics

Heat sesame oil in a large skillet or wok over medium-high heat. Add sliced
onions, grated ginger, and minced garlic. Sauté for 1–2 minutes until fragrant and
lightly softened.

2. Add the Maia Strips
Add the Maia Strips directly to the pan. Stir well to coat with the aromatics and
sesame oil. Cook for 3–4 minutes with a lid on, allowing the strips to absorb
flavour and lightly brown.

3. Build the sauce
Pour in the coconut aminos (or soy sauce), water, and maple syrup. Stir to
combine and gently scrape up any browned bits from the pan.

4. Add broccoli & simmer
Add the broccoli florets, season with sea salt and black pepper, and stir well.
Reduce heat to medium and cook for 5–7 minutes, covered and stirring
occasionally, until the broccoli is tender-crisp and the sauce has slightly reduced
and thickened.

5. Finish & garnish
Remove from heat. Garnish with sesame seeds and chopped green onions
before serving.
