Thai Coconut Soup with Maia BITES By Nutritionist Roxanne Thomas

This comforting, plant-based take on classic Thai coconut soup is rich and aromatic.
Fragrant lemongrass, galangal, and lime leaves create a bright, soothing broth, while
creamy coconut milk adds balance and depth. Maia BITES provide
satisfying texture and clean, plant-based protein, making this soup both nourishing and
deeply flavourful.

2 cups unsalted vegetable broth
1½ cups full-fat coconut milk
½ tsp sea salt, or to taste
1 bag Maia Bites (textured plant protein) from Maia Farms
1 stalk lemongrass, smashed and cut into 2-inch pieces
10 thin slices galangal or ginger
5 lime leaves
1–3 Thai chilies, to taste, chopped
2 tbsp coconut aminos
1 tsp finely chopped palm sugar or organic cane sugar
1 cup mushrooms, sliced
1 red bell pepper, chopped
2½ tbsp fresh lime juice

Chopped green onion and/or fresh cilantro

Instructions
1. Infuse the broth
In a medium pot over medium heat, combine vegetable broth, lemongrass, galangal or
ginger, lime leaves, Thai chilies, and sea salt. Bring to a gentle boil, then reduce heat
and simmer uncovered for 25–30 minutes to fully extract the aromatic flavours.
2. Strain the aromatics
Remove the pot from heat and strain out the lemongrass, galangal, lime leaves, and
chilies. Return the infused broth to the pot.
3. Add coconut milk, Maia Bites & vegetables
Stir in the coconut milk, Maia Bites, mushrooms and bell peppers. Return to a gentle
simmer and cook for 5–7 minutes, until the Maia Bites are tender and fully infused with
flavour.
4. Season and finish
Add coconut aminos and palm sugar, stirring to dissolve. Remove from heat and stir in
fresh lime juice. Taste and adjust seasoning as desired.
5. Garnish and serve
Ladle into bowls and finish with fresh green onion and/or cilantro.
